Happy Tuesday! It’s that time of year again. The time of year when little girls wearing uniforms begin knocking on doors. No, this isn’t some elaborate game of “Ding Dong Ditch”. It is Girl Scout Cookie Time! If you are anything like me, you know the joy of pulling a sleeve of frozen Thin Mints out of the freezer and eating only one cookie…. promptly devouring the entire thing! While delicious, these little minty wonders are not exactly the healthiest of foods. To combat my craving this time of year, I have created a Raw, Gluten Free, Dairy Free, Vegan version of Girl Scout Thin Mints. These little wonders contain only 4 ingredients (all available at Rollin’ Oats Market) and take mere minutes to make! Get ready for a “fudgie” taste sensation!
Ladies & Gentlemen… I give you Mint Fudgie Babies!!!!
Mint Fudgie Babies
Ingredients:
- 1 cup organic Walnuts
- 8 to 9 pitted Dates
- 4 tablespoons Chatfield’s Carob Powder (or Cocoa Powder)
- 1 teaspoon Flavororganics Pure Peppermint Extract
Place all ingredients in a food processor.
Whirl away until a ball forms.
Pinch off pieces and roll into small ball shapes.
You may leave them plain or roll them in Organic Powdered Sugar, Organic Coconut Flakes, or more Carob or Cocoa Powder.
Place in a freezer safe container and allow to harden at least 15 minutes before serving.
