Eating pancakes always feels like a celebration. What better to celebrate then the end of the week! As we pondered the multitudinous options for creating the perfect pancake, two flavors came to mind, Peanut Butter and Banana.
Arguably, even more perfectly suited to each other than Peanut Butter and Jelly, Peanut Butter and Banana is the perfect combination of salty and sweet that just screams comfort food! We just knew this pancake recipe was destined for greatness.

Peanut Butter Banana Pancakes
(Dairy-Free, Vegan)
Ingredients:
- 3/4 cup All-Purpose Flour
- 1/2 cup Whole Wheat Flour
- 2 Tblsp Agave Nectar
- 1 Tblsp Baking Powder
- 1/2 tsp Salt
- 1 1/4 cup Soy Milk
- 1/4 cup Peanut Butter
- 1 small Banana, chopped
Directions:
- In a medium bowl, combine the flours, baking powder, and salt.
- In small bowl or measuring cup, stir together the soy milk, agave nectar, and peanut butter until smooth. Add to the dry ingredients and beat just until a batter is formed. Do not over beat.
- Gently fold the chopped banana into the batter.
- Lightly oil a skillet or griddle over medium heat. Spoon the batter by 1/4 cup into the pan.
- Cook until golden brown on both sides. Serve immediately.
