Something spooky is afoot in the Rollin’ Oats kitchen.

For a few days, we have been hearing odd creaks, bumps, & groans coming from the kitchen. Today, the cause of the noise made itself known! We have a ghost…. in a cup, that is!

Enjoy this ghostly drink that is definitely more treat than it is trick!

Ghostly White Hot Chocolate

(Gluten-Free, Nut-Free)

Ingredients:

  • 2/3 cup White Chocolate Chips
  • 3 cups Vanilla Soy Milk, divided
  • 1 Cinnamon Stick
  • 1/8 tsp Nutmeg

Directions:

  1. In a large saucepan, combine 1/4 cup Vanilla Soy Milk, White Chocolate Chips, Cinnamon Stick, & Nutmeg.
  2. Simmer over low heat, stirring continuously, until chips are melted.
  3. Discard the cinnamon stick.
  4. Add the remaining Vanilla Soy Milk and simmer, stirring, until heated through.
  5. Serve garnished with ground cinnamon.

Mummies are taking over the kitchen, & we don’t mean mom’s from across the pond!

Continuing with our ghoulish October recipe series, we are bringing you a fun dinner project for you to make with your family! English Muffins provide the base for personal size pizzas that your family will love decorating! Scare up a vegetable side dish & dinner will be ready in no time flat!

Creepy Mummy Personal Pizzas

(Nut-Free)

Ingrediets:

  • 6 English Muffins, split in half
  • 3/4 cup Muir Glen Pizza Sauce
  • 12 slices Mozzerella Cheese
  • sliced Black Olives

Directions:

  1. Preheat your oven broiler & toast tops of muffins until golden.
  2. Remove english muffins from the oven & spoon pizza sauce onto the inside of the muffins.
  3. Slice mozzerella cheese slices into strips & lay “bandage-lie” over top the pizza sauce.
  4. Place 2 olive slices in the center of each english muffin for the eyes.
  5. Place pizzas back in the oven under the broiler until cheese is melted.

Black Magic Brownies….

We are gearing up for Halloween with a series of ghoulish-ly good recipes!

Conjour up some magic in your kitchen and create rich, decadent brownies using a black beans! That’s right! These brownies are completely flourless. A can of black beans replaces the flour & adds heart healthy protein & fiber to your dark chocolate-y dessert! It’s magic!

Black Magic Brownies

(Gluten-Free, Dairy-Free)

Ingredients:

Directions:

  1. Preheat oven to 350°F. Lightly grease an 8×8 square baking pan.
  2. In a blender, combine all ingredients. Blend until smooth.
  3. Pour the mixture into the prepared baking dish.
  4. Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.

Yesterday, we promised a recipe for a yummy baked good featuring our homemade “Just Apples” Applesauce. Today, we deliver the goods!

High protein Garbanzo Fava Bean Flour & fiber-ful Gluten-Free Oat Flour provide the base for this “so-good-you-won’t-believe-it’s-healthy” quick bread recipe. To be honest, this recipe started with no plan. Ingredients were added on a whim and instinct trumped reason. We got lucky! The end result was a loaf of soft, subtly sweet bread perfect for a Wheatless Wednesday breakfast! 

Applesauce Pecan Bread

(Gluten-Free, Dairy-Free, Vegan)

Ingredients:

  • 1 cup Bob’s Red Mill Gluten-Free Oat Flour
  • 1/2 cup Bob’s Red Mill Garbanzo Fava Flour
  • 1/2 cup Sorghum Flour
  • 1 tsp Xanthum Gum
  • 2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 tsp Cinnamon
  • 1/4 tsp Cloves
  • 1/4 tsp Nutmeg
  • 1 cup Apple Juice
  • 2/3 cup Light Agave Nectar
  • Egg Replacer for 2 Eggs
  • 3 Tblsp Unsweetened Applesauce
  • 3 Tblsp Coconut Oil
  • 1/3 cup chopped Pecans

Directions:

  1. Preheat oven to 350 degrees F and spray 3 mini-loaf tins with non-stick cooking spray.
  2. In a medium bowl, whisk together the dry ingredients.
  3. In a large bowl, combine wet ingredients.
  4. Slowly add dry ingredients to the wet, mixing until combined.
  5. Fold in chopped pecans by hand.
  6. Pour batter into 3 mini-loaf pans.
  7. Bake in preheated oven 35-40 minutes, until a toothpick inserted near the center comes out clean.
  8. Cool bread in pan for 10 minutes. Finish cooling before slicing…. if you can wait that long!

Do you ever cook something just so your house will smell delicious? We will be the first to step forward and admit it…. WE DO!

There is nothing better than arriving home from a long day at work to a house filled with the sweet smell of apples! During the fall season, apples are coming into their peak. The time is ripe (pardon the pun) for homemade applesauce! Naturally sweet, this recipe is utter simplicity at its finest. We chose not to add cinnamon to our recipe because we plan to use our applesauce for baking. However, feel free to add cinnamon to your own crock pot of apple awesomeness!

“Just Apples” Applesauce

(Gluten-Free, Dairy-Free, Nut-Free, Vegan)

Ingredients:

  • 3 lbs Macintosh Apples
  • 1 cup Water
  • 1 1/2 Tblsp Lemon Juice

Directions:

  1. Peel, core, & dice apples into small pieces.
  2. Place apples & remaining ingredients in a crock pot.
  3. Cook on low for 6-8 hours, until soft.
  4. Mash apples with a fork until desired consistency is reached.
  5. Store in the refrigerator for up to a week.

Meatless Monday is getting spicy!

We love a good salad. There are endless possibilities for reinvention! Today, we are giving our salad a Southwestern flair. Protein packed tofu & fiber-ful black beans will keep you satisfied for hours and buzzing with energy!

Southwestern Tofu Salad

(Gluten-Free, Nut-Free)

Ingredients:

  • 1 cup Romaine Lettuce, chopped
  • 1/8 cup Black Beans, drained & rinsed
  • 1/3 block Nasoya Firm Tofu, pressed
  • 1 ear Organic Corn, shucked
  • 1/2 an Organic Tomato , sliced
  • 1/4 Avocado, sliced
  • 2 Tblsp Salsa
  • 2 Tblsp shredded Cheddar Cheese

Directions:

  1. Heat a grill pan over medium-high heat & spray with non-stick cooking spray.
  2. Place tofu and ear of corn in pan and grill until both are lightly charred on each side.
  3. Cube grilled tofu into 1/4″ pieces & cut corn kernels from the cob.
  4. In a bowl, place romaine lettuce. Top with tomato slices, cubed tofu, corn, black beans, avocado, cheese, & salsa.
