Grandma’s Lace Cookies are a tradition around here. Sweet, lacey circles of deliciousness that evoke holiday cheer in all of us, these cookies are sure to be a hit at your next cookie exchange!
Grandma’s Lace Cookies
(Nut-Free)
Ingredients:
- 1/2 cup Bob’s Red Mill Almond Meal
- 5 Tblsp Butter
- 1/4 cup Brown Sugar
- 2 Tblsp Sugar
- 2 Tblsp Agave Nectar
- 1/3 cup All-Purpose Flour
- 1/8 tsp Salt
- 1 tsp pure Vanilla Extract
Directions:
- Preheat oven to 350 degrees F, and line 2 baking sheets with parchment paper.
- In a medium saucepan over low heat, heat the butter, brown sugar, sugar, and agave nectar, stirring until melted and smooth.
- Increase the heat to medium high and bring to a boil. Be sure to stir constantly.
- Immediately remove the saucepan from the heat and stir in the flour, almond meal, salt, and vanilla extract until fully incorporated.
- Drop batter by teaspoon onto prepared cooke sheets. Cookies will spread while cooking, so allow room for spreading.
- Bake until golden, about 8-10 minutes.
- Allow to cool 1-2 minutes on the baking sheet before removing to a cooling rack.
