Perfect Pasta Salad
(Gluten-Free, Dairy-Free, Vegan)
- 3/4 lb. Debole’s Rice Plus Golden Flax Spiral Pasta
- 3/4 lb. Sunergia Soyfoods Mediterranean Herb Soy Feta Cheese
- 1/4 c Red Onion, minced
- 1/2 c Mediterranean Organic Sundried Tomatoes, drained and diced
- 1 c Mediterranean Organic Kalamata Olives
- 3 c fresh Baby Spinach
- 1 clove Garlic, minced
- 1/2 tsp Sea Salt
- 3/4 tsp Pepper
- 3 Tblsp Napa Valley Naturals Red Wine Vinegar
- 1/2 c Napa Valley Naturals Organic Extra Virgin Olive Oil
- Cook noodles according to package instructions, drain, and place in a large bowl.
- Add soy feta cheese, onion, tomatoes, olives, and spinach.
- In a small container with a lid, combine all dressing ingredients and shake until well blended.
- Pour dressing over salad and toss gently to combine.
- Serve at room temperature.
