Rosemary Roasted New Potatoes & Kabocha Squash
(Gluten-Free, Dairy-Free, Nut-Free, Vegan)
Ingredients:
- 7 or 8 New Potatoes, halved
- 1 small Kabocha Squash, cleaned and sliced into strips
- 1 Tblsp Extra Virgin Olive Oil
- Crushed Rosemary
- Thyme
- Sage
- Herbamare
- Black Pepper
Directions:
- Preheat oven to 375 degrees.
- Toss ingredients together in a medium bowl until evenly coated.
- Place on a foil lined baking sheet.
- Roast 45 minutes, or until slightly caramelized.
